Making Jam without Pectin

We make most jams using this procedure, regardless of the fruit. The first steps are very similar to candy making. We bring the water and sugar to the firm ball stage, exactly as is done for making caramel, before adding in the fruit. If you prefer the dry method for caramel making, you may omit the water.

When making and canning jam, we want to bring out the natural pectin which is the thickening agent, rather than adding store bought pectin. The natural pectin in the fruit can be forced to react using acid contained in lemon juice plus sugar to further sweeten the fruit and provide an additional thickening agent. Note: some fruits are naturally high in pectin and do not call for lemon juice.

WEAR LONG SLEEVES AND DO NOT LET THIS SPLATTER ON YOU! BURNS FROM HIGH TEMPERATURE SUGAR WILL STICK TO AND PENETRATE THE SKIN!!!

1. Clean, seed or pit and clean fruit

2. Heat water to a simmer

3. Add sugar

4. If recipe calls for lemon juice, add it at this time.

5. SLOWLY heat until liquid reaches 250° F at sea level stirring often.

1000 ft = 248° F, 2000 ft = 246° F, 3000 ft = 244° F, 4000 ft = 242° F, 5000 ft = 241° F, 6000 ft = 239° F, 7000 ft = 237° F, 8000 ft = 235° F

6. Heat Fruit.

You may add the squeezed lemon halves during the cooking process to pick up the flavor of the zest and then remove them before canning.

7. Bring to a slow boil for recipe cook time, stirring often and removing scum.

8. Check to make sure liquid resembles a thick syrup by placing on a plate, letting it cool and then turning it slightly. When it resembles a thick syrup, the jam is ready for canning.
